Choco-Vanilla Ice Cream Sandwiches
These treats are perfect for summertime. They are easy to make and everyone will love them. Soft chocolate cookies are filled with vanilla ice cream and frozen. For the ultimate chocolate treat, fill the cookies with chocolate ice cream.
Ingredients
Makes: 12 ice cream sandwiches
- 520g chocolate sponge cake mix
- 115g butter, softened
- 1 teaspoon vanilla extract
- 2 eggs
- 85g plain chocolate chips
- 110g butterscotch chips
- 2 litres vanilla ice cream, softened

- Preheat oven to 180 C / Gas 4. Lightly grease baking trays.
- In a large bowl, mix together the cake mix, butter, vanilla extract, eggs, chocolate chips and butterscotch chips. Roll dough into 5cm balls and place them onto the prepared baking trays. Bake for 10 minutes in the preheated oven. Do not overbake; the cookies should be set, but still soft. Let cool on the baking tray for a few minutes before removing to finish cooling on wire racks.
- Using an ice cream scoop, mould the softened ice cream into a ball about the size of the cookies. Place scoop of ice cream between two cookies and gently press together. If you like a smooth edge, run the back of a spoon around the edge of the ice cream sandwich. Working quickly, fill all of the cookies, lay out on a baking tray and place in the freezer to harden. Serve when the ice cream has frozen solid. Sandwich cookies can be stored in a freezer bag for up to two weeks.
Butterscotch chips
Are also known as butterscotch morsels and can be purchased online.

This turned out so good!! I made the batter as directed (only adding 3 tbsp. of flour at 5600 feet), but made one giant sandwich using 8" cake rounds. Baked at 310° for 25 minutes. I also topped it with mini M&Ms. It looked as good as it tasted. These were delicious and a big hit at a party I hosted. However, I was only about to make nine sandwiches from the dough, instead of the twelve that the recipe indicated.
