Cinnamon Spiced Peach Cobbler

About this recipe: An extremely easy fruit cobbler to whip up! Fresh peaches are topped with sugar syrup, a sprinkling of cinnamon and a sponge cake mix. Blobs of cream cheese and butter are dotted on top which create a beautiful golden crust when baked.

Serves: 12 

  • 12 fresh peaches, pitted and sliced
  • 250ml water
  • 200g caster sugar
  • 1/2 teaspoon ground cinnamon
  • 520g sponge cake mix
  • 225g cream cheese
  • 115g butter

  1. Preheat oven to 180 C / Gas 4.
  2. Spread peach slices evenly into a 20x30cm baking dish. Combine water and sugar in a small bowl. Stir to dissolve, then pour mixture over peaches.
  3. Sprinkle over cinnamon, followed by dry cake mix. Top cake mix with pats of cream cheese. Dot cobbler with butter.
  4. Bake in preheated oven for 45 minutes, until golden.

Cook's note

You can also use tinned peaches in this recipe. Use 4 (400g) tins and pour 250ml juice over them for step 2.
