About this recipe:A very simple chicken dish that's full of flavour. Chicken breast pieces are sauteed with dried herbs, then combined with tinned tomatoes, gravy granules and Marsala wine. Serve with rice, pasta or boiled new potatoes.
1 tablespoon vegetable oil
4 skinless chicken breast fillets - cut into bite size pieces
1 teaspoon dried Italian herbs
salt and pepper to taste
1 teaspoon garlic granules
1/2 teaspoon dried sage
2 (400g) tins whole plum tomatoes, drained
2 tablespoons gravy granules
60ml Marsala wine

Heat oil in a large frying pan over medium high heat. Add chicken and saute for about 5 minutes, until browned. Season with Italian herbs, salt, pepper, garlic granules and sage and saute for another 10 minutes, until chicken is almost cooked through and juices run clear.
Pour tomatoes and liquid over chicken, then add gravy granules and wine and stir all together. Reduce heat to low and simmer for about 20 minutes. Serve hot over cooked rice, if desired.
