    About this recipe: My husband's delicious, juicy beef burger that is a little lower in fat and calories than most. Very flavourful and perfect for a quick supper along with a green salad or some oven chips.

    Serves: 8 

    • 450g lean minced beef
    • 1 teaspoon olive oil
    • 1 large green peppers, sliced
    • 1 onion, sliced
    • 6 button mushrooms, sliced
    • 125g grated light mozzarella cheese
    • 8 burger buns
    • light Italian dressing, to taste

    1. With the mince, make 8 thin burgers. Fry in a frying pan for 3 to 4 minutes on both sides or until done. Set aside.
    2. In the same pan, heat the olive oil over medium heat. Saute the green peppers, onion and mushrooms for 1 minute. Cover and let cook in the juices for 5 minutes.
    3. Place the burgers on the buns, top with vegetables and light mozzarella cheese. Drizzle Italian dressing over each to taste.
