About this recipe: Four simple ingredients is all it takes for this tasty sausage and egg bake, which is akin to quiche except a whole lot easier. Use sausagemeat or your favourite sausages, sliced into rounds. It also works great with bacon.


Serves: 6 

  • 12 eggs, beaten
  • 675g sausagemeat or sliced sausage
  • 450g grated Cheddar cheese, divided
  • 7 slices white bread, torn into pieces

  1. Preheat oven to 180 C / Gas 4.
  2. Brown sausagemeat in a large frying pan over medium-high heat. Drain off fat, and set aside to cool. Pour the eggs into a lightly greased 22x33cm baking dish.
  3. In a separate large bowl, combine the sausagemeat, bread and 3/4 of of the cheese. Mix well and pour this into the egg mixture. Top with the remaining cheese and cover with aluminium foil.
  4. Bake at 180 C / Gas 4 for 15 minutes, then uncover and bake until golden brown and bubbly.
