About this recipe:Four simple ingredients is all it takes for this tasty sausage and egg bake, which is akin to quiche except a whole lot easier. Use sausagemeat or your favourite sausages, sliced into rounds. It also works great with bacon.
12 eggs, beaten
675g sausagemeat or sliced sausage
450g grated Cheddar cheese, divided
7 slices white bread, torn into pieces

Preheat oven to 180 C / Gas 4.
Brown sausagemeat in a large frying pan over medium-high heat. Drain off fat, and set aside to cool. Pour the eggs into a lightly greased 22x33cm baking dish.
In a separate large bowl, combine the sausagemeat, bread and 3/4 of of the cheese. Mix well and pour this into the egg mixture. Top with the remaining cheese and cover with aluminium foil.
Bake at 180 C / Gas 4 for 15 minutes, then uncover and bake until golden brown and bubbly.
