    A soft and delicious rye bread that is made easy in your bread machine. Perfect for savoury ham sandwiches for a tasty change from the norm, or toasted with soup.

    Serves: 10 

    • 200ml water
    • 3/4 teaspoon cider vinegar
    • 200g strong bread flour
    • 50g rye flour
    • 25g oat bran
    • 15g butter
    • 1 1/2 tablespoons caster sugar
    • 1 teaspoon salt
    • 1 teaspoon caraway seeds
    • 1 teaspoon dried minced onion
    • 2 tablespoons unsweetened cocoa powder
    • 1 teaspoon dried active baking yeast

    1. Place the ingredients in the pan of the bread machine in the order suggested by the manufacturer. Select Normal setting, and then press Start.

    This makes a smaller loaf. I didn't have oat bran, so I used toasted wheat germ. I also didn't have caroway seed, so I substituted fennel seed. It turned out GREAT!!! The whole family loved it. Thank you for awonderful recipe!  -  30 Jul 2002  (Review from Allrecipes US | Canada)


    Excellent black bread! Taste and texture are great; moist, not spongy, won't fall apart when you spread butter on it. Even my 2-year-old grandson likes it a lot.     My husband said this didn't taste like the Black Bread he'd had while stationed in Germany, but that it was still very good. I don't have a bread machine, so I made it by hand.
