Spicy fish and bacon stew

    Tasty, easy to cook and made with ingredients you are likely to have in the cupboard! Delicious served with warm crusty bread.

    Serves: 4 

    • cooking oil
    • 4 medium sized potatoes, diced
    • 1 large onion, finely chopped
    • 2 red chillies, finely choppped
    • 1 x 400g tin chopped tomatoes
    • 450ml chicken stock
    • 100ml dry white wine
    • 1 or 2 teaspoon cayenne pepper (depending on your tastes!)
    • 1 teaspoon garlic salt
    • salt
    • fresh ground black pepper
    • 4 haddock loin fillets, diced
    • 6 rashers smoked back bacon, cut in small pieces
    • 300ml water (if stew has reduced a lot)

    1. Heat a little cooking oil in a large casserole dish or saucepan.
    2. Add the diced potatoes, chopped onions and red chillies and saute until golden
    3. Add the tinned tomatoes, chicken stock, dry white wine, cayenne pepper, garlic salt, salt and pepper and bring to the boil, then cover and simmer for 20 minutes stirring occasionally
    4. Stir in the haddock loins and bacon pieces and add the water (if your stew has reduced a lot) then simmer covered for another 20 minutes, stirring occasionally.
    5. Add more salt and pepper to taste and serve with crusty bread or rice.

    Nice and easy to make and very tasty. I had it with long grain rice with mushrooms. I used three loins which was about 500gm and plenty and it didn't need any extra water. Definitely one to make again.  -  08 Aug 2011


    This was so tasty. I don't like chilli so I omitted it and the garlic salt and substituted crushed garlic and celery salt which I found lurking in the cupboard. A wonderful combination. Next time I will try leaving out the potato and adding rice instead. Really great easy meal.  -  10 May 2012


    Made this yesterday & it was amazing. I added prawns along with the haddock loin & used chorizo sausage instead of bacon, It has soooo much flavour, this will become a favourite winter warmer meal for us x  -  14 Oct 2013
