Fig biscuit squares

    Lovely fig biscuit squares, a simple and gorgeous recipe for using fig preserves whether homemade or shop-bought!

    Serves: 12 

    • 680g fig preserves
    • 150g margarine
    • 2 eggs
    • 200g caster sugar
    • 250g plain flour
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon bicarbonate of soda
    • 2 teaspoons baking powder

    Prep:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Preheat oven to 190 C / Gas 5.
    2. Cream together margarine, eggs, sugar and vanilla. Sift flour, bicarb and baking powder. Add to egg mixture.
    3. Grease a small rimmed baking tray with margarine. Pour 1/2 of the dough mixture into tray and spread.
    4. Pour fig preserves over the dough and gently spread. Drop rest of dough over figs. Place in oven. When mixture starts to melt and gets soft, spread the top. Bake for 40 minutes, cool and cut into 24 squares.

    I used the fig preserve recipe and blended it so that it would come out more like the newtons we know and love. The instructions were a bit confusing but the taste was incredible.
