Farfalle with homemade tomato pasta sauce

    Make your own gorgeous no-cook pasta sauce with both fresh and sun-dried tomatoes, olives, basil and spices in the comfort of your own kitchen, then toss with hot cooked pasta and top with crumbled feta cheese for an unmistakeably delicious, homemade meal.

    Serves: 7 

    • 475ml olive oil
    • 2 tablespoons sun-dried tomatoes, sliced
    • 4 tablespoons sliced black olives
    • 2 tablespoons chopped fresh basil
    • 2.5kg tomatoes, seeded and chopped
    • 2 tablespoons chopped fresh chives
    • 1 1/2 teaspoons ground black pepper
    • 1 1/2 teaspoons salt
    • 1 teaspoon crushed red chilli flakes
    • 4 cloves garlic, minced
    • 450g farfalle pasta
    • 225g crumbled feta cheese

    1. In a large bowl combine olive oil, sun dried tomatoes, olives, basil, tomatoes, chives, salt, black pepper, red pepper flakes and garlic. Marinate for 3 hours in refrigerator.
    2. Cook pasta in a large pot of boiling water until al dente. Drain.
    3. Pour sauce over hot pasta and toss lightly. Sprinkle with crumbled feta cheese, if desired.

    Following everyone else, I decreased the oil to 3/4 cup. This was WONDERFUL! We enjoyed it so much, and the leftovers were even better.     LOVED, LOVED, LOVED this! I used mini penne because that's what the little guy chose, reduced the olive oil to 1/2 cup, per other reviews, which was perfect for us, and used 3 LARGE tomatoes (not sure of the weight, but I know it wasn't 5-1/2 pounds). The flavors of this were outstanding! As soon as hubby took a bite he said, 'Oh, this is a definate 5 stars'! He also said that he will be asking for this often, and that's fine with me because it's simple to make and FANTASTIC~YUM! IMO, the feta is a MUST!     This was fabulous. The only reason I am giving 4 stars is because I find the amount of oil in this recipe to be over the top. To each, his/her own, but to those looking to lower the fat and calories - I made a 4-5 serving of this with only 1/4 cup and it is still amazing.
