Fresh strawberry muffins

    Fresh strawberries baked into a light vanilla and spice muffin mixture. Quick, simple, sweet fresh fruit treats. Mmm!

    Serves: 12 

    • 230g chopped fresh strawberries
    • 100g caster sugar
    • 4 tablespoons caster sugar
    • 50g butter, softened
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 220g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground nutmeg

    1. In a small bowl, combine the strawberries and 100g sugar. Set aside for 1 hour. Drain, reserving liquid and berries separately.
    2. Preheat the oven to 220 C / Gas 7. Grease a 12 cup muffin tin, or line with paper cases.
    3. In a medium bowl, cream together the butter and 4 tablespoons sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, bicarb, salt and nutmeg; stir into the creamed mixture alternately with the juice from the berries. Gently stir in the berries. Spoon mixture into the prepared muffin cups.
    4. Bake for 18 to 20 minutes in the preheated oven, or until the tops spring back when lightly touched. Cool in the tin on a wire rack.

    I made these when I was having a baking day so leaving the strawberries and hour was fine, they smell beautiful when they are cooking, very mouthwatering!!!  -  17 Mar 2012


    Easy to make strawberry smelt lovely,a little dry for me,maybe I'll add a little milk next time .I didn't have any nutmeg but they still turned out good.  -  28 Jul 2012


    the mix was a bit dry so I added a little milk until it looked right, I also added slightly more bicarb and they turned out great. wasn't as sweet as id hoped so maybe a little more sugar next time too but all in all they were still really good  -  17 Mar 2014
