About this recipe: This classic white vanilla filling for layer cakes or other desserts has the slightly caramelised silkiness of evaporated milk adding to its buttercream lightness and is completed with vanilla and sugar.


Serves: 12 

  • 215g butter or margarine
  • 200g caster sugar
  • 180ml evaporated milk
  • 1 tablespoon vanilla extract

  1. In a large bowl, cream butter for 5 minutes. Add margarine and cream for another 5 minutes. Beat in sugar, then add evaporated milk and vanilla. Beat until very light and fluffy.
