400g caster sugar

145g dates, pitted and chopped
115g chopped walnuts
65g digestive biscuit crumbs

Preheat oven to 180 C / Gas 4.
Separate the eggs and beat the egg yolks until light and lemon coloured. Slowly add the sugar and baking powder to the beaten egg yolks, mixing constantly. Add the dates, nuts, digestive biscuit crumbs and salt.
Beat the egg whites until stiff peaks form. Fold the egg whites into the egg yolk mixture. Pour this whole mixture into an ungreased 2 lb (900g) loaf tin.
