Puréed date and walnut squares

    Simply purée fresh dates with water at home, then use this naturally sweet and moistening date purée to make these yummy, chewy fruit and nut squares. A healthy, yummy baked treat just made to be enjoyed with coffee or a cuppa.

    Serves: 24 

    • 225g butter
    • 125g plain flour
    • 300g caster sugar
    • 1 teaspoon bicarbonate of soda
    • 2 eggs
    • 235g chopped walnuts
    • 145g puréed dates

    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 20x30cm tin.
    2. Melt butter. In a large bowl mix melted butter with sugar, eggs, dates and nuts.
    3. Mix flour with bicarb and add flour mixture to date mixture; combine.
    4. Spread mixture in prepared tin. Bake at 180 C / Gas 4 for 30 minutes. Cool and cut into squares.

    Omigosh. This cake is superb! I used fresh dates which were lovely and sticky when pureed, and the cake perfumed the house beautifully when baking.
