Treasure chest chocolate coconut cookies

    These cookies are like edible treasure chests full of goodies. Packed with chocolate and coconut joined by whole walnuts, porridge oats, crushed corn flakes cereal and vanilla. On the yummy biscuit map X marks the spot with this recipe, matey!

    • 225g butter
    • 235ml vegetable oil
    • 200g caster sugar
    • 220g dark brown soft sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon salt
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon cream of tartar
    • 440g plain flour
    • 55g crushed corn flakes cereal
    • 80g porridge oats
    • 75g desiccated coconut
    • 120g walnuts
    • 336g milk chocolate chips

    1. Preheat oven to 180 C / Gas 4.
    2. In a large bowl beat together the butter, vegetable oil, caster sugar and dark brown soft sugar until smooth and creamy. Then add egg, vanilla, salt, bicarb and cream of tartar and mix with an electric mixer until slightly fluffy. With a spoon, gradually stir in flour until well mixed. Stir in cornflakes, porridge oats, coconut, walnuts and chocolate chips. Drop by heaping tablespoonfuls on ungreased baking trays, 5cm apart.
    3. Bake in a preheated oven for 12 minutes, or until slightly brown. Remove from oven; allow cookies to cool 5 minutes on baking trays before removing to wire racks to cool completely.

    We loved these cookies. The only thing I will change next time, is to crush the corn flakes into crumbs, so they aren't so distinguishable in the final product.  -  13 Jan 2006  (Review from Allrecipes US | Canada)


    Kids, wife, coworkers and I all loved this one! You can substitue applesauce for 1/2 the oil and oatmeal for the coconut flakes, and rasin bran for the cornflakes. Healthy cookies! Doesn't get better than this!  -  25 Nov 2006  (Review from Allrecipes US | Canada)
