    About this recipe: Cod fillets baked with butter, soy sauce marinade, lemon, tomatoes and spices. The fragrant citrus aromas will fill your kitchen, then the lemon soy tang, sweetness of the tomatoes and kick of spices with bites of tender baked cod will fill your tum!

    Serves: 4 

    • 455g cod fillets
    • 115g butter, melted
    • 4 tablespoons soy sauce-based marinade
    • 1 teaspoon salt
    • 1 teaspoon ground black pepper
    • 1 teaspoon cayenne pepper
    • 1 lemon, quartered
    • 2 small tomatoes, thinly sliced

    1. Preheat oven to 190 C / Gas 5.
    2. Place fish in a 20x30cm baking dish or tin.
    3. Pour butter, marinade, cayenne pepper, salt and pepper onto and around the fish. Squeeze the lemons onto the fish and lay tomato slices over the top.
    4. Bake for 30 minutes or until the fish is flaky.
