Moist cantaloupe melon bread

    So easy to make in the bread machine, this very moist and naturally sweet bread is made with fresh cantaloupe melon, with the wee kick of paprika and bright tang of orange zest. Delicious! Vital wheat gluten (also known as gluten powder or gluten flour) is available online or at bakeries / speciality shops.

    • 360g cubed cantaloupe melon
    • 2 1/2 teaspoons easy bake yeast
    • 445g strong white bread flour
    • 2 tablespoons vital wheat gluten
    • 5 tablespoons dried milk powder
    • 3 tablespoons caster sugar
    • 1 teaspoon salt
    • 1/2 teaspoon paprika
    • 1 egg
    • 3 tablespoons butter, softened
    • 1 tablespoon orange zest

    1. Place 240g cantaloupe melon cubes in a blender or food processor and purée. Reserve remaining 120g cantaloupe cubes.
    2. Place yeast, flour, gluten, milk powder, sugar, salt, paprika, egg, butter, orange zest, cantaloupe cubes and cantaloupe purée in the pan of the bread machine. Select White Bread cycle; press Start. This is a soft, sticky dough. If any of it clings to the sides of the pan at the end of the first kneading, you can push it down with a rubber spatula.
    3. Let cool, cut into thin slices and serve toasted with cream cheese.

    Definitely not a fan of this bread. I'm not the world biggest fan of melon, granted. But this bread was overpowering. Not my cup of tea.  -  02 Oct 2014
