Fresh mango salsa

    I love this fresh mango and tomato salsa recipe. It's easy to whip up if you're expecting a crowd. Serve with tortilla chips or with barbecued chicken breasts.

    Serves: 40 

    • 350g fresh, ripe tomatoes, diced
    • 250g mango, diced
    • 1/2 onion, diced
    • 1 teaspoon caster sugar
    • Few tablespoons freshly chopped fresh coriander
    • 2 tablespoons fresh lime juice
    • 1 tablespoon cider vinegar
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 cloves garlic, minced

    1. Stir the tomatoes, mango, onion, sugar, coriander, lime juice, cider vinegar, salt, pepper and garlic together in a bowl; refrigerate 1 hour before serving.

    I made a small amount of the salsa by dividing the large ingredients by 10 and then used it as a filling in a wrap with Red Thai style chicken fillets that you get in packs. It was amazingly yummy and very healthy. Thanks :-)  -  06 Dec 2012

    Delicious and very quick and simple to do. Served it with chicken strips, tortillas and sour cream. Will definitely do this again.  -  02 May 2012
