About this recipe:The refreshing fresh fish dish which originated in Peru, ceviche is traditionally some version of fresh raw fish, citrus juices and chillies. This one includes sashimi grade tuna, lemon juice, fresh ginger root and spring onions and jalapeño. All tossed together, then chilled until ready to serve. Delicious.
340g sashimi grade tuna
3/4 bunch spring onions, thinly sliced
1/2 medium onion, finely diced
2 teaspoons minced fresh root ginger
1 fresh jalapeño, seeded and minced
4 tablespoons lemon juice, or to taste
1/4 teaspoon soy sauce, or to taste

Cut tuna into 1cm cubes and place into a bowl. Stir in the onion, spring onions, ginger, jalapeño, lemon juice and soy sauce; mix to combine. Cover and refrigerate for 2 to 3 hours. Taste before serving and add more lemon juice or soy sauce as needed.
It wasn't bad... I have eaten ceviche before, the two peruvian that came for dinner weren't impressed they said soy sauce,ginger, spring onions in a ceviche is unheard of, This was more a modified new age version so if you are looking for a ceviche recipe this is really not the one but it wasn't bad. - 09 Oct 2013
