The refreshing fresh fish dish which originated in Peru, ceviche is traditionally some version of fresh raw fish, citrus juices and chillies. This one includes sashimi grade tuna, lemon juice, fresh ginger root and spring onions and jalapeño. All tossed together, then chilled until ready to serve. Delicious.

Ingredients

Serves: 4
  • 340g sashimi grade tuna
  • 3/4 bunch spring onions, thinly sliced
  • 1/2 medium onion, finely diced
  • 2 teaspoons minced fresh root ginger
  • 1 fresh jalapeño, seeded and minced
  • 4 tablespoons lemon juice, or to taste
  • 1/4 teaspoon soy sauce, or to taste

Preparation method

Prep: 25 mins

Cut tuna into 1cm cubes and place into a bowl. Stir in the onion, spring onions, ginger, jalapeño, lemon juice and soy sauce; mix to combine. Cover and refrigerate for 2 to 3 hours. Taste before serving and add more lemon juice or soy sauce as needed.
