100g caster sugar
1 egg, beaten
80ml hot coffee
190g plain flour
1 1/2 teaspoons baking powder
1/4 teaspoon bicarbonate of soda
2 teaspoons ground cinnamon
240g icing sugar
2 tablespoons cold coffee

Preheat the oven to 180 C / Gas 4. Grease and flour a 20x30cm baking tin.
In a large bowl cream together the margarine and sugar. Blend in the egg, treacle and hot coffee. Sift together the flour, baking powder, bicarb and cinnamon; stir into the treacle mixture until well blended and mix in the raisins. Pat the mixture evenly into the prepared tin.
Bake for about 25 minutes in the preheated oven, or until firm.
To make icing:
Combine butter, icing sugar and cold coffee in a medium bowl; beat until smooth. Ice tray bake while warm, but allow to cool before cutting into squares.
