Easy-as-cake buttercream icing

About this recipe: A simpler buttercream recipe cannot be found - margarine, butter, sugar and milk, boiled then whipped together into a light, fluffy icing.


Serves: 18 

  • 180ml milk
  • 210g butter or margarine, softened
  • 200g caster sugar

Prep:15min  ›  Cook:2min  ›  Ready in:17min 

  1. Pour milk into a saucepan and bring to just a simmer. Be careful, if it starts to boil it will quickly boil over.
  2. Meanwhile, combine the butter or margarine and sugar in a large bowl and beat with an electric mixer until light. When the milk is heated, gradually drizzle in the hot milk, while continuing to whip until light and fluffy.

This doesn't work. The hot milk melts the butter & it's all turns into a sloppy mess. Not sure where I went wrong here, but won't be trying it again. - 08 May 2014


It is a very good recipe. It tastes good and is easy to make it took me less than 17 minutes witch is the time it is supposed to take u - 27 Apr 2014


This offers an excellent alternative to icing sugar, in some ways even better than normal icing as it is lighter as less sweet. I would agree about using slightly less milk than the recipe suggests. - 18 Jul 2015
