Christmas cake chocolate truffles

    It's Boxing Day and you're wondering what to do with all of that leftover Christmas cake. No worries! These chilled dessert 'truffles' make ideal use of leftover Christmas cake crumbs with the luscious addition of melted chocolate, cream, butter and orange liqueur. Chilled and rolled in icing sugar (or cocoa powder if you prefer), they will make today's dessert delicacies out of yesterday's Christmas cake! For a more kid friendly version, use orange juice instead of orange liqueur.

    Serves: 30 

    • 170g cooking chocolate
    • 3 tablespoons whipping cream
    • 3 tablespoons butter
    • 2 tablespoons orange liqueur
    • 120g Christmas cake crumbs
    • 65g sifted icing sugar or cocoa powder

    Prep:5min  ›  Cook:15min  ›  Extra time:2hr chilling  ›  Ready in:2hr20min 

    1. Chop chocolate into small pieces. In saucepan over very low heat, melt chocolate, cream and butter until blended and smooth.
    2. Stir in liqueur and fruitcake crumbs; chill for 2 hours or until firm.
    3. Shape into 2.5cm balls and chill at least 20 minutes. Before serving, roll in icing sugar or coca powder and chill for 20 minutes.
