    About this recipe: This delicious chocolate cake tastes just like the classic American whoopie pie. It's moist, chocolately and topped with a rich vanilla topping.

    Makes: 1 20x30cm cake

    • For the Cake
    • 375g plain flour
    • 400g caster sugar
    • 3 teaspoons bicarbonate of soda
    • 6 tablespoons unsweetened cocoa powder
    • 1 teaspoon salt
    • 150ml vegetable oil
    • 3 tablespoons distilled malt vinegar
    • 2 teaspoons vanilla extract
    • 475ml water
    • For the Topping
    • 115g butter, softened
    • 100g margarine
    • 150ml milk
    • 1 teaspoon vanilla extract
    • 200g caster sugar

    1. Preheat oven to 170 C / Gas 3.
    2. To make the cake, mix the flour, sugar, bicarbonate of soda, cocoa, salt, oil, vinegar, vanilla and water together. Stir until just combined. Pour batter into an ungreased 20x30cm baking tin.
    3. Bake in preheated oven for 30 to 35 minutes. Let cake cool.
    4. When the cake is cool, make the topping. Beat together butter, margarine, sugar, milk and 1 teaspoon vanilla. Continue beating for 10 minutes. Spread over cooled cake.
