About this recipe:This is a wonderful icing that is golden in colour and packed full of citrussy goodness. Spread over the tops of cupcakes, cakes or cookies.
Makes: 1 icing enough to fill and cover a 2 layer 23cm cake
75g butter, softened
1 1/2 tablespoons grated orange zest
1 teaspoon grated lemon zest
1/4 teaspoon salt
1 egg yolk
475g icing sugar
1 tablespoon orange juice
2 teaspoons lemon juice

Cream together butter, orange zest, lemon zest and salt. Add egg yolk and mix well. Add icing sugar, alternately with orange juice and lemon juice, beating well after each addition. Makes enough icing to cover tops and sides of two 23cm layers.
