Cinnamon spiced raisin bread

    A delicious fruit bread that's simple to throw together. It's made in the bread maker, flavoured with cinnamon and golden syrup and dotted with sultanas.

    Serves: 6 

    • 300ml warm water (45 degrees C)
    • 2 tablespoons vegetable oil
    • 1 1/2 tablespoons golden syrup
    • 410g strong white bread flour
    • 1 tablespoon strong white bread flour
    • 2 tablespoons milk powder
    • 1 teaspoon ground cinnamon
    • 1 1/2 teaspoons salt
    • 70g sultanas
    • 1 tablespoon dried active baking yeast

    1. Place ingredients in the pan of the bread machine in the order suggested by the manufacturer. Select the setting suitable for standard, soft white bread. Start.

    Made this yesterday for the first time. I didn't have golden raisins; so I used ordinary ones. It is still delicious! I may try using less yeast - a tablespoon seems a lot, and the loaf flattened itself on the lid of the breadmaker! I may also try honey, instead of syrup. All in all, a delicious recipe, which is also versatile, adaptable and easy to make. Nearly 3 years on and I'm still making this delicious bread. I love it toasted with butter and honey.  -  21 Feb 2014
