About this recipe: A great no-bake recipe, which is perfect for the summertime. A cracker biscuit base is topped with a vanilla ice cream and Angel Delight filling, then whipped cream. Feel free to play around with different flavours of ice cream.

Makes: 1 20x30cm cake

  • 450g buttery round crackers, such as Ritz crushed
  • 225g butter, melted
  • 100g caster sugar
  • 2 litres vanilla ice cream, softened
  • 125ml milk
  • 200g instant vanilla dessert mix, such as Angel Delight
  • 350ml double cream, whipped

Prep:20min  ›  Extra time:2hr chilling  ›  Ready in:2hr20min 

  1. To make the base: Combine crackers, butter and sugar in a 20x30cm baking dish and press mixture into sides and bottom of dish.
  2. In a large bowl, combine ice cream and milk with electric mixer. Blend in dessert mix, then pour mixture into prepared base. Top with whipped cream and refrigerate for 2 hours before serving.
