About this recipe:A great no-bake recipe, which is perfect for the summertime. A cracker biscuit base is topped with a vanilla ice cream and Angel Delight filling, then whipped cream. Feel free to play around with different flavours of ice cream.
Makes: 1 20x30cm cake
450g buttery round crackers, such as Ritz crushed
225g butter, melted
100g caster sugar
2 litres vanilla ice cream, softened
200g instant vanilla dessert mix, such as Angel Delight
350ml double cream, whipped

To make the base: Combine crackers, butter and sugar in a 20x30cm baking dish and press mixture into sides and bottom of dish.
In a large bowl, combine ice cream and milk with electric mixer. Blend in dessert mix, then pour mixture into prepared base. Top with whipped cream and refrigerate for 2 hours before serving.
