    About this recipe: This is a fantastic cake that will satisfy any sweet craving. It's made with oats, warmly spiced and topped with a walnut and coconut topping.

    Ingredients
    Makes: 1 20x30cm cake

    • 80g porridge oats
    • 300ml boiling water
    • 115g butter
    • 200g caster sugar
    • 220g dark brown soft sugar
    • 2 eggs
    • 165g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1 teaspoon vanilla extract
    • 90g melted butter
    • 325g dark brown soft sugar
    • 175ml evaporated milk
    • 110g desiccated coconut
    • 175g chopped walnuts
    • 1 teaspoon vanilla extract

    Method
    Prep:25min  ›  Cook:35min  ›  Ready in:1hr 

    1. Pour water over oats, let stand.
    2. Cream 115g butter and sugars. Add eggs and blend in a large mixing bowl. Sieve the flour, bicarbonate of soda, salt, cinnamon and nutmeg together. Add to sugars and egg mixture. Add vanilla and oats mixture, blend well.
    3. Pour batter into a 20x30cm baking tin.
    4. Bake in a preheated 180 C / Gas 4 oven for 30 to 40 minutes.
    5. Meanwhile, mix together 90g melted butter, 325g dark brown soft sugar, 175ml evaporated milk, coconut, walnuts and 1 teaspoon vanilla.
    6. Pour this coconut concoction over the hot cake.
    7. Put cake under grill and watch close so walnuts do not burn, about 5 to 10 minutes. Serve hot or let cool. Enjoy.

    WOW!! After reading a couple reviews, I too, put less sugar (1/2 c white, 1/2 c brown in batter, and only 1 c. brown in icing) and it gets more fabulous everytime I eat another piece!! Very moist, not too sweet but definately satisfies the sweet tooth. I also omitted the nuts but am going to try pecans next time.     This cake is out of this world . Too bad there isn't a 10 star rating because it deserves it .. I made tis cake 2 weeks ago and have made it 4 time sence then . People were hunting me down to get the recipe ( at a funeral no less ), so print out extra copies to take with you because your gonna need'em . HEAVENY , HEAVENLY . This is a man catching cake and a women ego lifting cake .
