    About this recipe: These are the perfect snack or lunchbox treats. They are easy to make, sweet, chewy and packed full of pecans.

    Makes: 36 bars

    • 450g dark brown soft sugar
    • 4 eggs
    • 250g plain flour
    • 1/2 teaspoon salt
    • 1 teaspoon vanilla extract
    • 110g chopped pecans

    1. Preheat oven to 200 C / Gas 6. Grease a 38x25cm swiss roll tin.
    2. In a heavy saucepan, combine the sugar and eggs. Cook over medium heat, stirring constantly until sugar is dissolved. Remove from heat, stir in the flour, salt, vanilla and pecans.
    3. Spoon mixture into the prepared baking tin and bake for 15 minutes in the preheated oven. Cool and cut into squares.
