About this recipe:No one would ever suspect that this delicious cake is vegan-friendly! It's easy to throw together and everyone will love it. Enjoy as a dessert or for afternoon tea. It also makes a great base for birthday cakes.
Makes: 1 20x30cm cake
375g plain flour
400g caster sugar
6 tablespoons unsweetened cocoa powder
2 teaspoons bicarbonate of soda
2 teaspoons baking powder
150ml vegetable oil
2 tablespoons distilled malt vinegar
2 teaspoons vanilla extract

Method Prep:15min › Cook:20min › Ready in:35min
In a large bowl, combine all the dry ingredients together.
In another bowl, combine all the wet ingredients together.
Pour the we ingredients all at once into the dry ingredients. Beat until smooth.
Pour batter into a greased 20x30cm baking tin.
Bake in a preheated 180 C / Gas 4 oven for 20-25 minutes. Let cool in tin. When cool, dust with icing sugar
A very nice cake especially if you like something light and not too sweet
Make sure you follow the directions esp the time of cooking. Mine came out of the pan very easily so yeah, no over cooking!

Excellent cake! Just a note - I cooked it for 45 minutes, as it wasn't ready after 25 minutes. Very, very easy to make, tasted great. I made it for a dairy-intolerant colleague, decorated it with icing, and she and my other workmates (who can and will eat anything) loved it.
Obviously it's not quite the same as a 'normal' cake (with butter/eggs), but if you don't tell people, they probably won't even notice, it really is that good. Brilliant if you want to treat a vegan (or someone who can't eat standard cake)! - 16 Aug 2015
