About this recipe: A delicious buttery cake that's a easy to throw together. It's moist, tender and flavoured with vanilla extract. Decorate with your favourite icing.

Makes: 1 3 layer 20cm cake

  • 225g butter
  • 400g caster sugar
  • 4 eggs
  • 310g self-raising flour
  • 250ml milk
  • 1 tablespoon vanilla extract

Prep:20min  ›  Cook:20min  ›  Ready in:40min 

  1. Preheat oven to 180 C / Gas 4. Grease and flour three 20cm tins.
  2. In a medium bowl, cream together the butter and sugar. Beat in the eggs, one at a time. Combine the milk and vanilla, add alternately to the creamed mixture with the flour, ending with the flour. Mix only as much as necessary. Pour into the prepared tins.
  3. Bake for 15 to 20 minutes in the preheated oven. Cake will pull away from the sides of the tins slightly when done. Allow cakes to cool in the tins for a few minutes before removing to wire racks to cool completely.

I re-calculated all ingredients to 3 eggs base. Followed the recipie and made a cake. Had to use my largest tin for baking it as it wud not fit into any smaller ones. so I put all muxture into 1 large deap tin and baked in oven 180C for 55 mins!!! Only then it looked baked through and became golden on top. I let it cool down over night and then cut in into 3 layers. If you are doing it with 4 eggs this cake will be realy huge!!! Will feed 20 people easily!!! - 12 Nov 2012

I added some freshly picked blackberries to this recipe, layered it together with blackcurrant jam and topped it with vanilla lemon icing. OMGosh - best cake ever. Sponge is ridiculously delicious! - 17 Aug 2012
