Creamy herb salad dressing

    This bright green dressing is not only quick and easy to make, but it also tastes fantastic. It's made with mayonnaise and flavoured with anchovies, spring onions, fresh parsley and tarragon. It also does well as a dip or a sauce.

    Serves: 6 

    • 500ml mayonnaise
    • 4 anchovy fillets, finely chopped
    • 1 spring onion, chopped
    • 2 teaspoons chopped fresh parsley
    • 2 teaspoons chopped fresh chives
    • 1 tablespoon tarragon vinegar
    • 1 teaspoon chopped fresh tarragon

    1. Mix together mayonnaise, anchovies, spring onion, parsley, chives, vinegar and tarragon. You can use a blender to get a smooth green sauce.
    2. Refrigerate until ready to serve and pour over favourite salad.

    Green Goddess was my mother's favorite salad dressing, and she got me hooked on it. After I could no longer find it in grocery stores, I thought that wonderful dressing was gone forever. I have been delighted with this dressing every time I've made it. It brings back wonderful memories of my mother, good times, and family dinners. My friends have enjoyed this dressing and when I don't make it, they ask me where it is in the selection of dressings at my house.
