Green Tomato and Feta Pasta

    A simple, yet delicious vegetarian pasta that's a cinch to make. Pasta is served with sauteed green tomatoes and crumbled feta cheese. Enjoy with crusty fresh bread, if desired.

    Serves: 6 

    • 2 tablespoons olive oil
    • 1 onion, chopped
    • 6 green tomatoes, chopped
    • salt and pepper to taste
    • 450g tri-coloured pasta assortment
    • 150g crumbled feta cheese

    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. In a large frying pan, heat the olive oil over medium heat. Add the onion and saute until soft. Stir in the green tomatoes and season to taste with salt and pepper. Reduce heat to medium low and cook for about 10 minutes.
    2. Meanwhile, in a large pot of boiling salted water, cook pasta until al dente. Drain.
    3. Toss pasta with tomatoes. Top with the crumbled feta cheese.

    I added 3 cloves of garlic, a chicken buillion cube and pesto, for the finish, sprinkled some grated parmesan cheese. It was so good. I think I would try this adding shrimp and clam sauce in a place of chicken buillon next time.  -  07 Jul 2007  (Review from Allrecipes US | Canada)


    mmmmmm. This was very good. I added garlic with the tomatoes because it seemed like it needed it. I also added a little cajun seasoning for some spunk. I would definately try this. It's a great way to use green tomatoes!  -  29 Oct 2004  (Review from Allrecipes US | Canada)
