About this recipe: A deliciously hearty hot sandwich, which is super-easy to make. Sub rolls are filled with roast beef, sauteed mushrooms, onion, peppers and mozzarella cheese.

    Serves: 4

    • 3/4 (300g) tin chopped mushrooms, drained
    • 1 small onion, sliced
    • 1 green pepper, seeded and sliced into strips
    • 8 slices mozzarella cheese
    • salt to taste
    • seasoned salt to taste
    • 450g thinly sliced roast beef
    • 4 sub rolls, halved

    Prep:10min  ›  Cook:15min  ›  Ready in:25min

    1. Preheat a large frying pan over medium-high heat. On one half of the pan, place the mushrooms, onion and pepper. On the other side, place the roast beef. Cook and stir each group separately, chopping the beef into smaller pieces as it cooks and seasoning with salt and seasoned salt.
    2. When the vegetables are tender and the beef is hot, place the slices of cheese over the beef to melt. Remove from the heat. Scoop the cheesy beef into sandwich rolls and top with the onions and peppers.

Quick, easy and yummy. Left out the mushrooms as they aren't big favourites with my boys, and used orange instead of green pepper (there's no excuse for green peppers... eww!), and there wasn't a crumb left on a plate! - 09 Mar 2013
