Coconut mochi

    A delicious dessert that's sweet, sticky and oh-so-delicious. It's made by baking together glutinous rice flour, sugar, eggs, coconut milk and butter.

    Makes: 48 squares

    • 240g glutinous rice flour
    • 350g caster sugar
    • 1 tablespoon bicarbonate of soda
    • 2 eggs
    • 340ml evaporated milk
    • 385ml coconut milk
    • 1 teaspoon vanilla extract
    • 50g butter, melted

    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Preheat oven to 180 C / Gas 4. Spray a 20x30cm glass baking dish with cooking oil spray.
    2. Sieve together the rice flour, sugar and bicarbonate of soda; set aside. Beat eggs with evaporated milk, coconut milk and vanilla extract. Add flour and butter; beat until well combined.
    3. Pour into prepared tin and bake in preheated oven for 30 minutes. Allow to cool completely before cutting into 3.75cm squares.

    Can be purchased in Chinese/Oriental speciality shops or online.

    Good when it has cooled and the flavors had mingled but it's not what I was looking for. This is more for butter mochi lovers. I felt it's missing something.
