Halibut with Spinach and Cheese Sauce

About this recipe: A great fish supper, which is easy to make and tastes fantastic. It's so good that you can make it for guests. Halibut is baked on top of spinach in a creamy cheese sauce.


Serves: 4 

  • 225g grated Cheddar cheese
  • 40g grated Parmesan cheese
  • 475ml milk
  • 4 tablespoons plain flour
  • 4 tablespoons water
  • 575g frozen chopped spinach
  • 4 (170g) halibut steaks
  • salt and pepper to taste

  1. Preheat oven to 180 C / Gas 4.
  2. In a saucepan over medium heat, cook and stir the Cheddar cheese, Parmesan cheese and milk until melted and well blended. Mix in the flour and water, stirring constantly, until thick and smooth.
  3. Layer the spinach in the bottom of a baking dish. Arrange the halibut steaks over the spinach and season with salt and pepper. Pour the cheese sauce mixture over the halibut.
  4. Bake 45 minutes in the preheated oven, until the fish flakes easily with a fork.
