    About this recipe: A super-easy and healthy fish dish, which is a cinch to make. Halibut is baked with celery, onion, capers and green pepper in a garlicky tomato sauce.

    Serves: 6 

    • 900g halibut fillets
    • salt and pepper to taste
    • 4 tablespoons olive oil
    • 30g chopped fresh parsley
    • 1 onion, thinly sliced
    • 2 sticks celery, chopped
    • 1 green pepper, chopped
    • 1 (400g) tin chopped tomatoes
    • 2 tablespoons capers
    • 4 cloves garlic, finely chopped

    1. Preheat oven to 220 C / Gas 7.
    2. Wash halibut and pat dry. Cut into serving size pieces and place in a 20x30cm baking dish. Sprinkle with salt and pepper. Stir together the olive oil, parsley, onion, celery, pepper, tomatoes, capers and garlic; pour over the halibut.
    3. Bake until halibut is slightly opaque in the centre, about 20 minutes. Remove from oven; let stand for 10 minutes before serving.
