750g caster sugar
525g golden syrup
1 tablespoon orange or other flavoured extract
1/2 teaspoon food colouring (optional)
4 tablespoons icing sugar for dusting

In a medium saucepan, stir together the caster sugar, golden syrup and water. Cook, stirring, over medium heat until sugar dissolves, then bring to the boil. Without stirring, heat to 149 to 154 degrees C or until a small amount of syrup dropped into cold water forms hard, brittle threads.
Remove from heat and stir in flavoured extract and food colouring, if desired. Pour onto a greased baking trays and dust the top with icing sugar. Let cool and break into pieces. Store in an airtight container.
