Sweet Oat Cookies

    These Swedish cookies are also known as havreflarn. They are easy to make and everyone will love them. If you can't get your hands on bitter almonds, use regular almonds with almond extract to taste.

    Serves: 2 - 3 dozen

    • 75g butter
    • 90g porridge oats
    • 125g caster sugar
    • 1 egg, lightly beaten
    • 5 toasted bitter almonds, ground
    • 1 tablespoon plain flour
    • 1 teaspoon baking powder

    1. Preheat oven to 230 C / Gas 8.
    2. Melt butter and pour it immediately over the oats. Let the mixture cool down.
    3. Add sugar, egg and the ground almonds and stir. Combine the flour with the baking powder and then stir into the dough.
    4. Drop spoonfuls of the dough onto oiled baking trays, leaving adequate room for spreading.
    5. Bake cookies in the middle of the oven for about 6 minutes. Remove and cool.

    I love these little cookies, They are so simple to make and super fast. I did substitute pecans instead of the almonds. You really do need to watch the first batch to be sure your oven temp and time is right for them. They can burn easy.
