Easy Bolognese sauce

    This pasta sauce requires very little effort. Beef mince, peppers and mushrooms are simmered in a rich tomato sauce. Enjoy over freshly cooked pasta.

    Serves: 4 

    • 225g minced beef
    • 900g tomato based pasta sauce
    • 1 yellow pepper, diced
    • 1 red pepper, diced
    • 1 (400g) tin chopped tomatoes, drained
    • 6 fresh mushrooms, coarsely chopped

    Prep:15min  ›  Cook:40min  ›  Ready in:55min 

    1. In a frying pan over medium heat, brown the minced beef until no pink shows; drain off excess fat.
    2. In a large pot, combine browned beef and pasta sauce over medium heat for 5 or 10 minutes. Add yellow peppers, red peppers, tomatoes and mushrooms. Lower heat and simmer covered for 30 minutes, stirring every once in a while.

    I decided to try this recipe using some of my home grown tomatoes from my garden, peeling and smushing them up, about 2 cups worth. (I'm drowning in tomatoes!) I used it with a batch of homemade Rigatoni noodles made with my pasta maker. It was FABULOUS! So quick and easy!
