About this recipe: This chocolate cake is simple to make and tastes fantastic. It's dotted with pecans and topped with marshmallows and a creamy chocolate icing.


Makes: 1 20x30cm cake

  • 4 eggs
  • 225g butter
  • 4 tablespoons unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 400g caster sugar
  • 200g self-raising flour
  • 110g chopped pecans
  • 450g mini marshmallows
  • 60g butter, melted
  • 475g icing sugar
  • 4 tablespoons unsweetened cocoa powder
  • 125ml evaporated milk

  1. Preheat oven to 180 C / Gas 4. Grease and flour an 20x30cm baking tin.
  2. In a large bowl, cream 225g butter and sugar. Add eggs one at a time, mixing well with each addition. Add vanilla and mix to incorporate.
  3. In a separate bowl, mix flour and cocoa together, then add to the egg mixture and mix well to combine. Add nuts and combine.
  4. Pour into prepared tin and bake at 180 C / Gas 4 for 40 minutes. While cake is still hot, cover with marshmallows.
  5. In a small bowl, combine 60g melted butter, icing sugar, 4 tablespoons cocoa and evaporated milk. Spread evenly over top of cake.
