Wholesome oat cookies

    These cookies are simple to make and a little healthier than the average cookie. They are made with wholemeal flour and oats. Feel free to throw in extras, such as raisins, nuts or even chocolate chips.

    Makes: 60 

    • 125g sifted wholemeal flour
    • 1/2 teaspoon salt
    • 1/2 teaspoon bicarbonate of soda
    • 175g butter, softened
    • 220g dark brown soft sugar
    • 1 egg
    • 4 tablespoons water
    • 1 teaspoon vanilla extract
    • 250g porridge oats

    1. Preheat oven to 180 C / Gas 4. Grease baking trays. Stir together the wholemeal flour, salt and bicarbonate of soda; set aside.
    2. In a medium bowl, cream together the butter and dark brown soft sugar until light and fluffy. Stir in the egg, water and vanilla. Mix in the flour mixture, then stir in the oats. Drop teaspoons of the batter onto the prepared baking trays about 5cm apart.
    3. Bake for 12 to 15 minutes in the preheated oven. Remove from baking trays to cool on wire racks.

    Really good recipe! I used half butter & half applesauce, 1/2 cup brown sugar, 1/2 cup Splenda & cut down on the oats. I also omitted the water since I saw no need for it. I got about 30 from this. Thanks so much!  -  23 Feb 2006  (Review from Allrecipes US | Canada)
