About this recipe: This cake is traditionally eaten at Christmas. It's not your typical cheese cake, but it's delicious nonetheless. It's sweet and flavoured with Parmesan.

Makes: 16 servings

  • 340g margarine
  • 600g caster sugar
  • 250g sifted plain flour
  • 160g rice flour
  • 1 tablespoon baking powder
  • 475ml warm milk
  • 6 eggs
  • 160g grated Parmesan cheese
  • 100g caster sugar
  • 4 tablespoons plain flour
  • 4 tablespoons sesame seeds

  1. Preheat oven to 180 C / Gas 4. Lightly grease and flour a medium glass baking dish.
  2. In a bowl, beat together margarine and 600g sugar until fluffy. Alternately beat in 250g flour, rice flour, baking powder and milk. Slowly beat in the eggs and Parmesan cheese. Transfer to the prepared baking dish.
  3. In a small bowl, mix the 100g sugar, 4 tablespoons flour and sesame seeds. Sprinkle evenly over the batter in the cake tin.
  4. Bake 45 minutes in the preheated oven, until a skewer inserted in the centre comes out clean. Cool completely and cut into squares.
