Honey and garlic BBQ sauce

    This barbecue sauce is easy to make and packed full of flavour. One bulb of garlic is simmered with honey, tomato ketchup and various other seasonings. Use as a marinade, basting sauce or a dip.

    Makes: 1 litre

    • 500g ketchup
    • 1 bulb garlic, peeled and crushed
    • 250ml water
    • 2 tablespoons hot sauce
    • 4 tablespoons honey
    • 2 tablespoons treacle
    • 2 tablespoons dark brown soft sugar
    • 1 teaspoon Worcestershire sauce
    • 1 teaspoon soy sauce
    • 1 teaspoon salt
    • 2 tablespoons Cajun seasoning
    • 1 pinch paprika
    • 1 pinch crushed chillies
    • 1 pinch ground white pepper
    • 1 pinch ground black pepper
    • 2 tablespoons cornflour
    • 1 tablespoon water
    • 115g butter

    1. In a large saucepan over medium low heat, mix together ketchup, garlic, 250ml water, hot sauce, honey, treacle, dark brown soft sugar, Worcestershire sauce, soy sauce, salt, Cajun seasoning, paprika, crushed chillies, white pepper and black pepper. Allow the mixture to simmer approximately 30 minutes.
    2. In a small bowl, dissolve cornflour in 1 tablespoon of water. Adjust amount of water as needed to fully dissolve cornflour. Stir into the sauce mixture. Continue simmering approximately 15 minutes.
    3. Stir butter into the sauce mixture. Continue simmering mixture approximately 15 more minutes or until butter is melted and the sauce has begun to thicken. Serve over meats prepared as desired.

    Very good, I omitted the hot sauce, as well as the cornstarch,water and butter. I cooked it very slowly and it became thick and sticky the house smelled sooooo.... good. At supper time all that could be heard was mmmmmm, lips smacking and fingers being licked (not that I approve of finger licking) but who would want to miss a drop. Now this if finger licking good!!!     BRAVO!!! BRAVO!!! You ought to consider changing the name of this sauce to "The Best Dang Barbeque Sauce Ever". We did cut the garlic in half and omitted the butter as a reviewer suggested. We also added a tsp of onion powder and half a tsp of celery seed. Don't be afraid of the Cajun Spice.. you could add more if you want spiceier...but it was just enough for all to enjoy.     I made the sauce though I left out the Cajun seasoning, because I have small children and it would have made it to hot for them, but it still tasted wonderful you could smell it through the whole house. Also following others advice I didn't completely omit the butter, I cut it down to a 1/4 cup and made it a thicker sauce like my husband likes....but it is plenty thick without it.
