Curried Tuna Meltz

    These delicious open sandwiches are guaranteed to be a hit. Breakfast muffins are topped with a creamy curry tuna mixture and Cheddar, before being grilled to perfection.

    Serves: 4 

    • 1 (185g) tin tuna, drained
    • 4 tablespoons finely chopped celery
    • 4 tablespoons chopped spring onions
    • 2 tablespoons mayonnaise
    • 1 tablespoon lemon juice
    • 1/2 teaspoon curry powder or to taste
    • 2 breakfast muffins, split, toasted and buttered
    • 4 thin slices Cheddar cheese

    1. Preheat grill.
    2. In a medium bowl, stir together the tuna, celery, spring onions, mayonnaise, lemon juice and curry powder. Spoon equal amounts onto each muffin half and top with a slice of cheese. Place the sandwiches on a baking tray.
    3. Grill for 2 to 3 minutes or until cheese is melted and toasty. Serve hot.

    This was one of those recipes I kept talking about the rest of the night. I used fat-free miricle whip instead of mayo. I didn't have English muffins, so I used French rolls instead. I used mozzerella instead of cheddar, but left everything else the same. These would make a great appetizer, but my husband and I had ours as a snack.
