    About this recipe: A simple and delicious cake, which is perfect for the warm summer months. A sponge cake is filled with strawberry ice cream, then topped with cream cheese icing and fresh strawberries.

    Makes: 1 26cm tube cake

    • 1 angel food cake
    • 2 litres strawberry ice cream, softened
    • 475g icing sugar
    • 225g cream cheese
    • 180g fresh strawberries

    1. Slice prepared cake in half horizontally. Spread softened strawberry ice cream on bottom layer. Put top layer on top the ice cream. Freeze cake for 45 minutes to 1 hour.
    2. Mix cream cheese and icing sugar until light and fluffy.
    3. About 15 minutes before serving, remove cake from freezer and spread the cream cheese mixture over top and sides. Garnish with fresh strawberries.
