    About this recipe: This dairy-free fruit cake is packed full of flavour. It's made with mashed bananas, crushed pineapple and cherries, warmly spiced with cinnamon and dotted with pecans.

    Serves: 1 23 or 26 tube cake

    • 320ml vegetable oil
    • 600g caster sugar
    • 3 eggs, beaten
    • 260g tinned crushed pineapple with juice
    • 450g mashed bananas
    • 115g chopped pecans
    • 375g plain flour
    • 1 1/2 teaspoons vanilla extract
    • 2 teaspoons bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1 teaspoon salt
    • 250g cocktail cherries (optional)

    1. Grease and flour a 23 or 26cm tube cake tin. Preheat oven to 180 C / Gas 4.
    2. Mix together oil, sugar, eggs, pineapple, bananas, pecans, flour, vanilla, bicarbonate of soda, cinnamon, salt and cherries, if using. Pour into prepared tin.
    3. Bake for about 1 1/2 hours at 180 C / Gas 4.
