About this recipe: An Italian-inspired soup, that's easy to make and tastes fantastic. Halibut is simmered in a rich, well-flavoured tomato soup base. Enjoy with grated Parmesan, if desired.


Serves: 8 

  • 1.15kg halibut steaks, cubed
  • 1 red pepper, chopped
  • 1 onion, chopped
  • 3 sticks celery, chopped
  • 3 cloves garlic, finely chopped
  • 4 tablespoons olive oil
  • 250ml tomato juice
  • 125ml apple juice
  • 900g tinned whole plum peeled tomatoes, mashed
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon ground black pepper

  1. Saute the peppers, celery, onion and garlic in oil until tender. Add the tomato juice, apple juice, mashed tomatoes and herbs. Simmer for 30 minutes.
  2. Add halibut pieces to the soup. Cook until halibut is done, about 30 minutes. Salt and pepper to taste.
