Spaghetti Carbonara with Extras

    This dish is classy enough for guests and simple enough for a weeknight meal. Spaghetti is tossed with ham, olives, Parmesan, parsley, butter and eggs. Enjoy with a side salad and/or garlic bread.

    Serves: 4 

    • 225g spaghetti
    • 275g sliced ham, diced
    • 1 clove garlic, finely chopped
    • 15g butter
    • 40g grated Parmesan cheese
    • 3 eggs, lightly beaten
    • 4 tablespoons sliced black olives
    • 4 tablespoons chopped parsley
    • salt to taste
    • 50g butter

    1. Cook spaghetti according to package directions.
    2. While spaghetti is cooking, heat the 15g butter in a large frying pan. Saute ham and garlic.
    3. Drain spaghetti well and combine with ham and garlic in the frying pan. Over very low heat, slowly stir in the cheese, eggs, olives and half of the parsley. Remove from heat. Add salt and 50g butter to taste and sprinkle with remaining parsley. Serve.

    This was so simple to make, tasted lovely and very filling... Only made for 2 people so I amended the quantities and also added baby button mushrooms to the ham and garlic to sautee. Will be making again very soon!  -  02 Jan 2014


    This is good but much better with ham frozen green peas cream parmesan cheese and garlic. Also a great substitute for the ham is sliced sweet or hot Italian sausage.  -  31 Jan 2007  (Review from Allrecipes US | Canada)
