Chilli con carne with pepperoni

    This winter warming dish is simple to make and everyone will love it. Minced beef, pepperoni, mushrooms and kidney beans are simmered together in a spicy tomato sauce. Enjoy with rice, corn bread, tortilla chips or over jacket potatoes.

    Serves: 6 

    • 450g lean minced beef
    • 85g chopped onion
    • 750g tomato and cheese pasta sauce
    • 350ml water
    • 2 teaspoons sugar
    • 1 (400g) tin chopped tomatoes
    • 100g sliced mushrooms
    • 60g sliced pepperoni
    • 1 tablespoon beef stock
    • 1 tablespoon chilli powder
    • 1 (410g) tin kidney beans, drained and rinsed
    • 120g grated Cheddar cheese

    1. Crumble minced beef into a large stock pot over medium-high heat. Add onions and cook, stirring, until beef is evenly browned. Drain off fat, if necessary.
    2. Pour in the pasta sauce, water, sugar, tomatoes, mushrooms, pepperoni, stock, chilli powder and kidney beans. Bring to the boil. Reduce heat and simmer uncovered for 30 minutes, stirring occasionally, to blend flavours. Serve with grated Cheddar.
