Pork Pasta Bake

    A deliciously different pasta dish. Spaghetti is baked with sausagemeat, mango, tomato sauce and Cheddar cheese. Simple, yet utterly scrumptious.

    Serves: 8 

    • 450g spaghetti
    • 450g pork sausagemeat
    • 1 large onion, chopped
    • 1 mango, peeled, seeded and diced
    • 600g tomato puree
    • 225g Cheddar cheese, grated and divided
    • salt and ground black pepper to taste

    1. Preheat oven to 180 C / Gas 4. Coat a large baking dish with cooking oil spray.
    2. Fill a large pot with lightly salted water and bring to a rolling boil. Cook pasta in boiling water until cooked through but still firm to the bite, about 12 minutes. Drain.
    3. Place a large frying pan over medium heat; cook the sausagemeat, onion and mango in the frying pan until the sausagemeat is completely browned, 5 to 7 minutes. Stir in tomato puree and about half the Cheddar cheese; heat until the cheese is melted. Season with salt and pepper. Stir in cooked spaghetti. Transfer mixture to the prepared baking dish. Top with remaining Cheddar cheese.
    4. Bake in preheated oven until the Cheddar cheese is hot and bubbly, about 30 minutes.

    This was just OK. Kids, ages 7 and 1, enjoyed it. My mango was not that ripe, so I'm not sure if that makes a difference. I couldn't even taste the mango. Just seemed kind of plain to me--no spices other than s&p--and some of the spaghetti noodles got crispy dry in the oven, so you may want to cover for the first portion of the baking process. Since it was just tomato puree mixed in, it almost seemed like I was tossing it with ketchup. I will post a photo shortly.  -  09 Oct 2009  (Review from Allrecipes US | Canada)

    My husband hates leftovers... Just cooked this and he wants to have it again, leftover! I did adapt slightly, because I read it, wanted it, and didn't want to go to the store for real ingredients. substituted 4 chopped carrots for mango, added 3 cloves garlic, added a bit of mozzarella, and used crushed tomatoes instead of puree.
