Delicious gingery biscuits, which come out of the oven soft and then harden as they cool. An old-fashioned childhood favourite.

Ingredients

Serves: 12

Prep: 20 mins |Cook: 15 mins

1.	Preheat oven to 190 C / Gas 5.

2.	Sift together the flour, ginger and bicarbonate of soda. Dice the butter and rub in until the mixture resembles fine breadcrumbs. Stir in the sugar.

3.	Beat together the syrup and the egg, and stir into flour mixture. Knead with floured hands to form a smooth dough.

4.	Roll out on a floured worksurface about 0.5cm thick. Using a gingerbread man cutter, cut shapes until all of the dough has been used, rerolling the trimmings. Lay these on lined baking trays.

5.	Decorate with currants, chocolate chips and/or nuts for the eyes and buttons.

6.	Bake in the preheated oven for 15 minutes, until golden brown. Cool on a wire rack.
